Ingredients
1 cup cornmeal
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 egg
2 tablespoons vegetable oil
Directions
In a mixing bowl, combine cornmeal, flour, baking powder, baking soda, and salt. Mix well.
In a separate bowl, whisk together buttermilk, egg, and vegetable oil until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Heat a skillet over medium heat, add oil, and spoon batter onto the skillet.
Cook hoecakes until golden brown on both sides, flipping once during cooking.
