Ingredients
1 cup all-purpose flour
1 cup sugar
5 eggs, separated
1 teaspoon vanilla extract
1 teaspoon cream of tartar
1/2 teaspoon salt
Optional: lemon zest
Directions
Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing and flouring it to prevent sticking.
In a mixing bowl, whisk together the egg yolks, sugar, and vanilla extract until the mixture is light and fluffy.
Sift the flour and salt together, then gradually fold them into the egg yolk mixture until well combined.
In a separate clean bowl, beat the egg whites with cream of tartar until stiff peaks form.
Gently fold the egg whites into the batter, being careful not to deflate the airy texture.
Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Once baked, let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Serve slices of this Cloud 5 Cake on elegant dessert plates, garnished with a dusting of powdered sugar or a dollop of whipped cream for a touch of indulgence.
