Ingredients
1 cup rolled oats
1 cup whole wheat flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup Greek yogurt
1/2 cup honey
2 large eggs
1 tsp vanilla extract
1 cup blueberries
1/4 cup almond slices (optional)
Directions
Preheat the oven to 350°F and grease a baking pan.
In a bowl, mix rolled oats, whole wheat flour, baking powder, and salt.
In another bowl, combine Greek yogurt, honey, eggs, and vanilla extract.
Gently fold the dry ingredients into the wet mixture until well combined.
Gently fold in the blueberries and pour the batter into the prepared pan.
Sprinkle almond slices on top for added crunch (optional).
Bake for 30-35 minutes or until the cake is golden brown and a toothpick inserted comes out clean.
Let it cool before slicing and serving.
