Old-Fashioned Pecan Logs

Ingredients

1 cup pecan halves

1 cup brown sugar

1/2 cup heavy cream

1/4 cup unsalted butter

1 tsp vanilla extract

Pinch of salt
Directions
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Spread pecan halves on the prepared baking sheet and toast in the oven for 8-10 minutes.
In a saucepan, combine brown sugar, heavy cream, butter, vanilla extract, and salt. Stir over medium heat until smooth.
Add toasted pecans to the caramel mixture and cook for 2-3 minutes until slightly thickened.
Remove from heat, let the mixture cool for a few minutes, then shape into log-like forms on parchment paper.
Allow the logs to cool and set completely.
Optionally, drizzle with melted chocolate before serving.
