Stuffed Pepper Soup

Ingredients

1 lb ground beef

3 bell peppers (green, red, or mixed), chopped

1 onion, chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

1 can (8 oz) tomato sauce

4 cups beef broth

2 cups cooked rice

1 tbsp Italian seasoning

Salt and pepper to taste
Directions
In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
Add chopped onions and minced garlic to the pot, sauté until fragrant and translucent.
Stir in chopped bell peppers and cook until slightly softened.
Pour in diced tomatoes, tomato sauce, and beef broth. Bring the mixture to a simmer.
Add cooked rice and season the soup with Italian seasoning, salt, and pepper. Let it simmer for 10-15 minutes to blend flavors.
Taste and adjust seasoning if needed. Serve hot, garnished with favorite toppings like fresh herbs or cheese.
