1 cup cornmeal

1 medium zucchini, grated

Directions
Preheat the oven to 375°F (190°C) and grease a baking dish.
Mix cornmeal, flour, baking powder, salt, and sugar in a large bowl.
Whisk eggs and milk together in a separate bowl.
Combine wet and dry ingredients, then add zucchini and melted butter.
Fold in shredded cheddar cheese if desired.
Pour batter into the prepared baking dish and bake for 25-30 minutes.
