1940s Cheese Potato Onion Casserole

Ingredients

4 large starchy potatoes (such as Russets)

2 yellow or white onions

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/4 cup unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

Salt and pepper to taste

Pinch of paprika or garlic powder (optional)
Directions
Preheat your oven to 375°F (190°C) and grease a baking dish with butter or cooking spray.
Peel and thinly slice the potatoes and onions using a sharp knife or mandoline slicer.
In a skillet, melt butter over medium heat and sauté the onions until golden brown and caramelized. Set aside.
