1 tbsp unsweetened cocoa powder

½ tsp baking soda

¼ tsp salt

¾ cup granulated sugar

¾ cup vegetable oil (or melted butter)

2 large eggs, room temperature

1 tsp white vinegar

1 tsp vanilla extract

½ cup buttermilk (or milk + 1 tsp lemon juice)

1 tbsp red food coloring

16 oz (450 g) cream cheese, softened

½ cup granulated sugar

2 large eggs

½ tsp vanilla extract

½ cup sour cream (or Greek yogurt)

2 cups powdered sugar

Prepare the Pan:
Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line with parchment paper. Wrap the outside with foil.
