Ann Roger’s Christmas Cookies

Ingredients

2 1/4 cups all-purpose flour

1 cup granulated sugar

1 cup unsalted butter, room temperature

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp salt

1 cup chocolate chips (optional)
Directions
Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until well combined.
If desired, fold in the chocolate chips or any other mix-ins at this stage.
Using a cookie scoop or spoon, drop dollops of cookie dough onto the prepared baking sheet, spacing them a few inches apart.
Bake the cookies for 10-12 minutes or until the edges are lightly golden. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Once cooled, store the cookies in an airtight container to maintain their freshness.
