Ingredients
1 head of cabbage, chopped
1 lb of smoked sausage, sliced
1 onion, diced
2 bell peppers, chopped
3 cloves of garlic, minced
1 can of diced tomatoes
1 cup of chicken broth
2 teaspoons of Cajun seasoning
Salt and pepper to taste
Olive oil for cooking
Directions
In a large pan, heat olive oil over medium heat. Add the sliced smoked sausage and cook until browned.
Add the diced onion, bell peppers, and garlic to the pan. Sauté until the vegetables are tender.
Stir in the chopped cabbage and cook until it starts to wilt.
Add the diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper. Mix well to combine all the ingredients.
Cover the pan and let the jambalaya simmer for about 20-25 minutes, allowing the flavors to meld together.
Once the cabbage is tender and the flavors have developed, give the jambalaya a final stir and adjust the seasoning if needed.
