Ingredients
1 pound ground beef
1 packet taco seasoning
1 can black beans, drained and rinsed
1 cup salsa
1 cup corn kernels
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 can diced tomatoes, drained
10-12 corn or flour tortillas
Optional toppings: sour cream, sliced jalapeños, diced avocado
Directions
Preheat the oven to 375°F (190°C).
In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Add the taco seasoning, black beans, salsa, corn, and diced tomatoes to the skillet. Stir to combine and simmer for 5 minutes.
In a 9×13-inch baking dish, layer the bottom with tortillas. Add a portion of the beef mixture on top.
Sprinkle a layer of cheddar and Monterey Jack cheese over the beef. Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
Serve hot, garnished with sour cream, sliced jalapeños, and diced avocado, if desired.
