Ingredients
1 pound ground beef
2 tablespoons taco seasoning
8 ounces pasta
1 can diced tomatoes
1 can black beans
1 cup corn
2 cups cheese
1 onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
Directions
Preheat the oven to 375°F and grease a baking dish.
In a skillet, cook the ground beef with diced onions and garlic until browned.
Add taco seasoning, diced tomatoes, black beans, and corn to the skillet, stirring to combine.
Cook the pasta according to package instructions until al dente.
In a large bowl, mix the cooked pasta with the beef mixture and half of the cheese.
Transfer the mixture to the prepared baking dish and top with the remaining cheese.
Bake for 20-25 minutes or until the cheese is bubbly and golden.
