Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup canned pumpkin puree
1/2 cup vegetable oil
2 large eggs
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup finely chopped apples
1/2 cup chopped nuts (walnuts or pecans)
Directions
Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
In a separate bowl, mix the pumpkin puree, vegetable oil, eggs, sugar, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in the chopped apples and nuts until evenly distributed throughout the batter.
Pour the batter into the prepared loaf pan and spread it out evenly.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
