Cozy Grandma’s Apple Pie Enchiladas

Ingredients

6 medium apples, peeled, cored, and thinly sliced

1/2 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 cup butter

8 8-inch flour tortillas

1/2 cup granulated sugar

1/2 cup water

Optional: vanilla ice cream, whipped cream, or caramel sauce for serving
Directions
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a large skillet, melt the butter over medium heat. Add the sliced apples, brown sugar, cinnamon, and nutmeg. Cook until the apples are tender, stirring occasionally.
Place a spoonful of the apple mixture onto each tortilla, roll them up, and place them seam-side down in the prepared baking dish.
In a saucepan, combine the granulated sugar and water. Bring to a boil, then reduce heat and simmer for 3-5 minutes to make a simple syrup.
Pour the syrup over the enchiladas in the baking dish, ensuring they are evenly coated.
Bake for 20-25 minutes or until the enchiladas are golden and bubbly.
Serve the enchiladas warm, topped with a scoop of vanilla ice cream, a dollop of whipped cream, or a drizzle of caramel sauce.
