Cozy Grandma’s Polish Pierogi

Ingredients

2 cups all-purpose flour

2 eggs

1/2 cup water

1/2 teaspoon salt

2 tablespoons butter

2 cups potatoes, boiled and mashed

1 cup cheese, grated

1 onion, sautéed

Optional: Sour cream for serving

Optional: Bacon bits for garnish
Directions
Prepare the dough by combining flour, eggs, water, and salt in a mixing bowl. Knead the dough until smooth, then let it rest for 30 minutes.
While the dough is resting, boil and mash the potatoes. Mix in the cheese and sautéed onions to create the filling for the pierogi.
Roll out the dough and cut it into circles. Place a spoonful of filling in the center of each circle, then fold the dough over and seal the edges.
Boil the pierogi in salted water until they float to the surface, then sauté them in butter until lightly browned.
Serve the pierogi hot, topped with sour cream, bacon bits, and additional sautéed onions for a delicious finishing touch.
