1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1/2 cup pumpkin puree
1 cup milk
1 large egg
2 tablespoons melted butter
Directions
In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
In a separate bowl, whisk together the pumpkin puree, milk, egg, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
Heat a skillet or griddle over medium heat and lightly grease with butter or cooking spray.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
Serve the pancakes warm with your favorite toppings, such as maple syrup, whipped cream, or chopped nuts.
