Directions
Start by making the pastry dough. Combine flour, sugar, and salt in a bowl. Cut in cold butter until the mixture resembles coarse crumbs.
Add ice water gradually and mix until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
For the almond cream filling, beat butter and sugar until light and fluffy. Add almond flour, eggs, vanilla extract, almond extract, and a pinch of salt. Mix until smooth.
Roll out the chilled dough into a circle. Spread the almond cream filling in the center, leaving a border. Fold the edges of the dough over the filling, creating a rustic tart shape.
Brush the pastry with an egg wash and sprinkle sliced almonds on top. Bake in a preheated oven until golden brown and bubbly.
Allow the Galette Perougienne to cool slightly before serving. Slice into wedges and enjoy this French delicacy warm or at room temperature.
