ghee’s old-fashioned apple pie

Ingredients

Fresh, crisp apples (e.g., Granny Smith, Honeycrisp)

All-purpose flour

Granulated sugar

Brown sugar

Ground cinnamon and nutmeg

Salt

Ghee (clarified butter)

Lemon juice

Ice water

Directions
Start by preparing the pie crust. In a mixing bowl, combine flour, salt, and chilled ghee, mixing until the mixture resembles coarse crumbs.
Gradually add ice water, a tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
While the dough chills, peel, core, and slice the apples. Toss the apple slices with lemon juice, sugars, spices, and a pinch of salt in a separate bowl.
Roll out one disc of dough on a floured surface to fit a pie dish. Transfer the rolled dough to the dish, pressing it gently to line the bottom and sides.
Fill the crust with the apple mixture, creating a mound in the center. Dot the apples with small pieces of ghee for added richness.
Roll out the second disc of dough and place it over the apples. Trim any excess dough, crimp the edges to seal, and make decorative slits on the top crust for steam to escape.
Brush the top crust with an egg wash for a golden finish. Bake the pie in a preheated oven until the crust is golden and the filling is bubbling.
Allow the pie to cool slightly before serving. Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream for a delightful indulgence.
