Ingredients

2 pounds beef sirloin, cut into bite-sized pieces

2 tablespoons olive oil

1 onion, diced

2 cloves garlic, minced

8 ounces mushrooms, sliced

2 cups beef broth

1 cup heavy cream

2 tablespoons all-purpose flour

Salt and pepper to taste

Fresh parsley for garnish
Directions
In a large skillet, heat olive oil over medium-high heat. Add the beef tips and cook until browned on all sides. Remove the beef from the skillet and set aside.
In the same skillet, add the diced onion and garlic. Cook until the onion is translucent and fragrant.
Add the sliced mushrooms to the skillet and cook until they are golden brown and tender.
Sprinkle flour over the mushroom mixture and stir to combine. Cook for a minute to get rid of the raw flour taste.
Gradually pour in the beef broth, stirring constantly to avoid lumps. Bring the mixture to a simmer.
Return the beef tips to the skillet, cover, and let simmer for about 1 hour or until the beef is tender.
Stir in the heavy cream and allow the gravy to thicken. Season with salt and pepper to taste.
Serve the beef tips and mushroom gravy hot, garnished with fresh parsley.
