Midwest Country Shipwreck Stew

Ingredients

1 pound beef stew meat, cubed

1 onion, diced

2 cloves garlic, minced

4 carrots, sliced

4 potatoes, diced

1 can diced tomatoes

4 cups beef broth

1 cup frozen corn

1 cup frozen peas

Salt and pepper to taste
Directions
Start by heating a large pot over medium heat and adding a splash of oil. Once hot, add the beef stew meat and brown on all sides.
Add the diced onion and minced garlic to the pot and sauté until fragrant.
Next, add the sliced carrots and diced potatoes to the pot, stirring to combine with the meat and aromatics.
Pour in the diced tomatoes and beef broth, bringing the mixture to a gentle simmer. Season with salt and pepper to taste.
Let the stew simmer for about 1-2 hours, or until the meat is tender and the vegetables are cooked through.
Stir in the frozen corn and peas, allowing them to heat through for an additional 5-10 minutes.
Adjust the seasoning if needed and serve the stew hot, garnished with fresh herbs if desired.
