2 cups fresh blackberries
2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup cold butter, cubed
3/4 cup milk
1 teaspoon vanilla extract
Directions
Preheat oven to 375°F (190°C) and grease a baking dish.
In a mixing bowl, combine flour, 1/2 cup of sugar, baking powder, and salt. Cut in the cold, cubed butter until mixture resembles coarse crumbs.
Slowly add milk and vanilla extract to the flour mixture, stirring until a soft dough forms.
Roll out the dough on a floured surface and cut it into squares.
Place a spoonful of blackberries in the center of each square and sprinkle with the remaining sugar.
Fold the dough over the blackberries to form dumplings and place them in the greased baking dish.
Bake for 35-40 minutes or until the dumplings are golden brown and the blackberries are bubbly.
Serve the blackberry dumplings warm, topped with whipped cream or vanilla ice cream.
