1 cup rolled oats
1 cup plain flour
1/2 cup caster sugar
1/2 cup unsalted butter
3 tbsp golden syrup
1/2 tsp bicarbonate of soda
1 tbsp boiling water
Directions
Preheat oven to 160°C (320°F) and line a baking tray with parchment paper.
In a large mixing bowl, combine rolled oats, plain flour, and caster sugar.
Melt unsalted butter with golden syrup in a saucepan over low heat.
Mix bicarbonate of soda with boiling water in a small bowl, then add to the melted butter mixture.
Pour the wet ingredients into the dry ingredients and mix until well combined.
Roll the mixture into small balls and place them on the prepared baking tray, flattening them slightly with a fork.
Bake the hobnobs for 15-20 minutes or until golden brown.
Allow the cookies to cool on the tray before transferring them to a wire rack to cool completely.
