Ingredients
1 cup granulated sugar
1 cup light corn syrup
1 cup creamy peanut butter
6 cups crispy rice cereal
1 cup semisweet chocolate chips
1 cup butterscotch chips
1 teaspoon vanilla extract
Directions
In a large saucepan, combine sugar and corn syrup over medium heat, stirring until the mixture begins to boil.
Remove the saucepan from the heat and stir in the peanut butter until smooth.
Add the crispy rice cereal to the peanut butter mixture, stirring gently to combine all ingredients thoroughly.
Press the mixture into a greased 9×13-inch pan, spreading it evenly to create a smooth layer.
In a microwave-safe bowl, melt the chocolate chips, butterscotch chips, and vanilla extract together in 30-second intervals, stirring until smooth.
Spread the chocolate mixture over the cereal layer in the pan, covering it completely.
Allow the Scotcheroos to cool and set before cutting them into squares and serving.
