Ingredients
1 9-inch unbaked pie crust
1 cup light corn syrup
1 cup brown sugar
3 large eggs
1/3 cup butter, melted
1 teaspoon vanilla extract
1 cup pecan halves
1/2 cup sweetened shredded coconut
1/2 cup canned crushed pineapple, drained
Directions
Preheat your oven to 350°F (175°C) and place the unbaked pie crust in a pie dish, crimping the edges as desired.
In a mixing bowl, combine the corn syrup, brown sugar, eggs, melted butter, and vanilla extract. Mix until well combined.
Fold in the pecan halves, sweetened shredded coconut, and crushed pineapple into the mixture.
Pour the filling into the prepared pie crust, spreading it evenly. Arrange additional pecan halves on top for decoration.
Bake the pie in the preheated oven for 50-60 minutes or until the filling is set and the crust is golden brown.
Once baked, remove the pie from the oven and let it cool before slicing and serving. Enjoy a slice of tropical paradise in every bite!
