Old-Fashioned Southern Chicken and Dumplings

Ingredients

1 whole chicken, cut into pieces

2 carrots, peeled and sliced

2 celery stalks, sliced

1 onion, chopped

4 cloves of garlic, minced

Salt and pepper to taste

Fresh herbs (such as thyme and parsley)

Water

2 cups all-purpose flour

1 tbsp baking powder

1 tsp salt

1 cup buttermilk

4 tbsp butter, melted

Chopped fresh parsley for garnish (optional)
Directions
In a large pot, combine the chicken pieces, carrots, celery, onion, garlic, salt, pepper, and herbs. Cover with water and bring to a boil. Reduce heat and simmer until the chicken is cooked through.
Remove the chicken from the pot and shred the meat. Discard the bones and return the shredded chicken to the broth.
In a mixing bowl, combine the flour, baking powder, and salt for the dumplings. Stir in the buttermilk and melted butter until just combined.
Drop spoonfuls of the dumpling mixture into the simmering broth. Cover and cook for 15 minutes or until the dumplings are cooked through.
Serve the Chicken and Dumplings hot, garnished with fresh parsley if desired. Enjoy the comforting flavors of this Southern classic!
