Ingredients

2 pounds potatoes, peeled and diced

Directions
Place diced potatoes, chopped onion, and minced garlic in the slow cooker.
Pour vegetable broth over the ingredients and ensure they are fully submerged.
Add thyme, salt, and pepper, then stir gently to combine flavors.
Cover the slow cooker, set it on low heat, and let the potatoes simmer for 6-8 hours.
Mash the potatoes slightly with a fork for a creamy texture.
