Slow Cooker Loaded Potato Soup (with Diced Potatoes)

Ingredients

6 cups diced potatoes

1 cup diced onions

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup crispy cooked bacon, crumbled

2 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper to taste
Directions
In a slow cooker, combine the diced potatoes, onions, garlic, thyme, salt, and pepper.
Pour the chicken or vegetable broth over the potato mixture, ensuring that all the ingredients are submerged.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
Using a potato masher or immersion blender, partially blend the soup to desired consistency.
Stir in the heavy cream and cheddar cheese until well combined.
Let the soup cook for an additional 30 minutes on low heat to allow the flavors to meld together.
Serve the soup hot, topped with crispy bacon and any other desired toppings.
