Smothered Pork Chops Recipe

Ingredients
6 boneless thick-cut loin pork chops
2 1/2 tablespoons paprika
1 tablespoon salt
1 tablespoon garlic powder
1 tablespoon black pepper
2 tablespoons onion powder
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon adobo seasoning
1 large onion, sliced
2 cloves garlic, minced
4 tablespoons butter
4 cups potatoes, sliced very thin (mandoline recommended)
1 can (10.75 oz) cream of mushroom soup
Instructions
Step 1: Prepare the Pork Chops
Mix Spices: In a small bowl, combine the paprika, salt, garlic powder, black pepper, onion powder, dried oregano, dried thyme, and adobo seasoning.
Season Pork Chops: Rub the spice mixture evenly over both sides of the pork chops. Set aside.
Step 2: Sear the Pork Chops
Heat Butter: In a large skillet, melt 2 tablespoons of butter over medium-high heat.
Sear Pork Chops: Add the seasoned pork chops to the skillet and sear for 2-3 minutes on each side until browned. Remove the pork chops from the skillet and set aside.
Step 3: Prepare the Vegetables
Sauté Onions and Garlic: In the same skillet, add the remaining 2 tablespoons of butter. Add the sliced onion and minced garlic, and sauté until the onions are soft and translucent, about 5-7 minutes.
Add Potatoes: Add the thinly sliced potatoes to the skillet and stir to combine with the onions and garlic.
Step 4: Assemble and Cook
Add Soup: Stir in the can of cream of mushroom soup, mixing well with the onions, garlic, and potatoes.
Layer Pork Chops: Nestle the seared pork chops back into the skillet on top of the potato mixture.
Cover and Simmer: Reduce the heat to low, cover the skillet, and let simmer for 30-40 minutes, or until the pork chops are cooked through and the potatoes are tender.
Step 5: Serve
Garnish: Garnish with fresh parsley, if desired.
Serve Hot: Serve the smothered pork chops hot, with the creamy onion and potato mixture. Enjoy!
Cooking Notes and Tips
Pork Chops: Use thick-cut pork chops for best results. Thin chops may cook too quickly and dry out.
Potato Slicing: A mandoline slicer ensures uniform, thin slices, which helps the potatoes cook evenly.
Soup Substitute: If you prefer, you can use cream of chicken or cream of celery soup instead of cream of mushroom.
