Strawberry Swirl Loaf

Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

1 cup fresh strawberries, chopped

1 tablespoon flour (for coating the strawberries)
Directions
Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
Toss the chopped strawberries with 1 tablespoon of flour to coat them evenly.
Whisk together the all-purpose flour, baking powder, baking soda, and salt in a medium bowl.
Cream the softened butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry flour mixture to the wet ingredients, alternating with buttermilk. Mix until just combined.
Gently fold in the flour-coated strawberries.
Pour the batter into the loaf pan, smooth the top, and create swirls with a knife.
Bake for 50-60 minutes until a toothpick inserted comes out clean. Cool in the pan before transferring to a wire rack.
