Vintage Prune Cake

Ingredients

1 cup dried prunes, pitted and chopped

2 cups all-purpose flour

1 ½ cups sugar

1 tsp baking soda

1 tsp salt

1 tsp cinnamon

1 tsp nutmeg

2 eggs, beaten

1 cup vegetable oil

1 cup buttermilk

1 tsp vanilla extract
Directions
Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
In a bowl, mix flour, sugar, baking soda, salt, cinnamon, and nutmeg.
In a separate bowl, combine eggs, oil, buttermilk, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Fold in the chopped prunes gently to distribute them evenly.
Pour the batter into the prepared pan and bake for 40-45 minutes until a toothpick inserted comes out clean.
Allow the cake to cool before slicing and serving.
