1 cup red bell pepper, diced
1 sweet onion, diced (Walla Walla or Vidalia recommended)
1/2 cup mushrooms, diced (brown or white)
3 teaspoons fresh minced garlic (or equivalent)
1 1/3 cups milk
3 large eggs
3/4 cup Bisquick or similar baking mix
3/4 teaspoon dried sage
1/4 teaspoon black pepper
2 1/2 cups Monterey Jack cheese, grated

Instructions
Step 1: Preheat the Oven
Preheat the oven to 400°F (200°C). Generously grease a deep-dish pie plate to prevent sticking and ensure easy serving.

Place a large skillet over medium heat. Add the sausage and cook, breaking it into small crumbles, until fully browned and no longer pink. Drain off excess grease if needed, but leave a small amount in the skillet for flavor.
