1. Prepare the Peanut Butter Mixture
In a large bowl, combine the peanut butter chips, softened butter, heavy cream, and vanilla extract. Mix until completely smooth and creamy.
2. Add Confectioners’ Sugar
Gradually add the confectioners’ sugar, about ½ cup at a time, mixing thoroughly after each addition. Continue until the mixture is firm enough to hold its shape but still pliable. The exact amount may vary based on humidity.
3. Shape the Truffles
Using a tablespoon or small cookie scoop, portion the mixture and roll into smooth, bite-sized balls. Place on a parchment-lined baking sheet.
4. Chill the Centers
Refrigerate the peanut butter balls for 30 minutes to firm up before coating.
5. Prepare the Chocolate Coating
In a microwave-safe bowl, combine the chocolate chips and shortening. Microwave in 30-second intervals, stirring well after each, until completely melted and smooth.
6. Dip the Truffles
Using a fork or dipping tool, fully coat each chilled peanut butter ball in the melted chocolate. Let any excess drip off, then return to the parchment-lined sheet.
7. Set the Chocolate
Refrigerate the dipped truffles for 20–30 minutes, until the chocolate coating is firm.
8. Serve and Store
Enjoy chilled or at room temperature. Store leftovers in an airtight container in the refrigerator.
