Slow Cooker John Wayne Casserole

Ingredients

1 pound ground beef

1 onion, diced

1 bell pepper, diced

1 cup corn kernels

1 can black beans, drained and rinsed

1 can diced tomatoes with green chilies

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

1 cup biscuit mix

1/2 cup milk

2 eggs

1 cup cheddar cheese, shredded
Directions
In a skillet, cook the ground beef until browned. Add diced onions and bell peppers, and sauté until softened.
Transfer the cooked meat and vegetables to a slow cooker. Add corn, black beans, diced tomatoes with green chilies, garlic powder, chili powder, salt, and pepper. Mix well to combine.
In a separate bowl, prepare the biscuit mix according to the package instructions. Add milk, eggs, and shredded cheddar cheese. Stir until a smooth batter forms.
Pour the biscuit batter over the meat and vegetable mixture in the slow cooker, spreading it evenly.
Cover the slow cooker and cook on low heat for 4-6 hours, or until the biscuit topping is cooked through and the casserole is bubbly and fragrant.
Once cooked, serve the Slow Cooker John Wayne Casserole hot, garnished with additional cheese and fresh herbs if desired.
